Hand-picked and pressed slowly. The juice was fermented in stainless steel and then the wine was aged on fine lees for 15 months. 
There is a strong lime fruit character to this wine. It also has flinty, stone, mineral aromas along with coriander, kaffir lime leaf and lemongrass. The acidity is the backbone of the wine giving a straight line and chalky finish, with the lime fruit most prominent, with peach and lemon fruit flavours coming through. In all of this, there is still an approachability and it remains light on its feet.
